Start charcoal (30+)
In dutch oven put:
2 large sliced onions in bottom of D.Oven
beef roast (can be cut in pieces to speed . cooking time)
1 bag of carrots (baby or cut into pieces)
1 potato/person cut in quarters or small . potatoes
Heat over 12 coals + 18 on top. Rotate oven every 10 minutes. Listen and watch after 30 minutes. You should hear bubbling or see some steam escape the oven.
Check carrots & potatoes with fork. Add pkg of gravy mix to thicken juices (optional)+The onion in the bottom keeps everything from burning and adds liquid-leave in big slices in bottom if you have scouts that don’t like onion.
+roast can be cut and froze ahead of time.
+roast can also be cooked ahead of time, (froze) and added on top of vegetables, gravy made ahead of time (froze) and added over all the last 20 minutes. [Why? If this is your meal for day 3 or 4 it is easier to transport cooked meat that raw-pack flat in Ziploc under your blocks of ice.]
+if you do prep work at home and use small red potatoes (they turn brown when cut ahead of time) you can have this meal ready to cook in the time it takes the coals to get hot. When done, dump the coals off the lid and heat your bread on top of the lid (in foil).
